The grapes here get a whole bunch ferment which adds a lively youthful energy and a very gentle extraction and the wine sees 20 months in old and new oak. The result is a lovely generous style with subtle spice and a lot of plummy, dark cherry fruit. Try it with curry; we did and it worked a treat, V
